Job Description

Role & responsibilities

Supervise daily kitchen operations
for Indian and Tandoor sections, ensuring smooth and timely food preparation.
Maintain authentic taste and quality
of all Indian and tandoor dishes as per standard recipes.
Monitor tandoor operations
control temperature, manage skewers, and ensure proper cooking of breads and kebabs.
Plan and organize mise-en-place
for service and banquets, allocating duties to commis and junior chefs.
Ensure food safety and hygiene compliance
as per FSSAI / HACCP standards across all workstations.
Control food cost and minimize wastage
through effective inventory management and portion control.
Train and supervise kitchen staff
, enhancing their skills in Indian cuisine and tandoor cooking.
Coordinate with service and stewarding teams
for efficient order flow and kitchen cleanliness.
Assist in menu planning and new recipe development
to enhance variety and guest satisfaction.
Report to the Executive Chef
on kitchen performance, equipment maintenance, and staff productivity.
