To ensure that all raw materials, in-process products, and finished namkeen items meet the required quality, food safety, and regulatory standards. The Quality shift chemist monitors production processes, maintains documentation, ensures quality compliance, and supports continuous improvement in the plant.
Key Job Responsibilities (JR)
1. Raw Material Quality Control
Inspect incoming raw materials such as edible oils, flours, spices, pulses, packaging materials.
Verify vendor COA (Certificate of Analysis) and match with internal QC parameters.
Conduct moisture, ash, oil quality, and other physical/chemical tests.
Approve or reject raw materials based on specifications.
2. In-Process Quality Checks
Monitor critical control points (CCPs) such as oil temperature, frying time, seasoning mixing ratios, metal detection, etc.
Perform hourly line checks for taste, texture, colour, moisture, weight, and packaging quality.
Ensure correct batch coding, packing weight accuracy, and sealing quality.
3. Finished Goods Quality Assurance
Conduct final quality evaluation before dispatch.
Ensure product shelf-life testing, sensory evaluation, and micro sampling.
Maintain retention samples and documentation.
4. Compliance, Audits & Documentation
Maintain all quality logs: RM inspection logs, CCP logs, weight control logs, hygiene audit records, etc.
Prepare labels, batch sheets, QC reports, and formats as per FSSAI/ISO requirements.
Coordinate for internal and external audits (FSSAI, ISO, HACCP, customer audits).
5. Food Safety & Hygiene Monitoring
Conduct GMP, GHP, and hygiene inspection of plant areas.
Monitor cleaning and sanitation activities.
Train production and packing manpower on food safety practices.
6. Process Improvement
Identify quality issues and provide corrective and preventive actions (CAPA).
Work with production team to reduce wastage, oil consumption, and consistency issues.
7. Lab Testing & Equipment Handling
Handle lab instruments: moisture analyzer, weighing balance, oil testing kit, pH meter, salt meter, etc.
Ensure calibration of measuring instruments and balances.
8. Customer Complaints Handling
Investigate customer complaints and prepare root cause analysis.
Implement preventive actions to avoid recurrence.
Required Skills & Qualifications
Graduation in Food Technology / Chemistry / Microbiology or related field.
1–4 years of experience in snacks/namkeen/food processing industry preferred.
Knowledge of FSSAI standards, HACCP, GMP, GHP.
Strong documentation discipline and analytical skills.
Ability to work in fast-paced production environments.
Good communication skills and teamwork.
