About the Role

We are looking for an experienced and disciplined Bakery Production Manager to lead our central kitchen operations. The role requires strong leadership, deep bakery knowledge, and the ability to run production smoothly with consistency, hygiene, and cost efficiency.

Key Responsibilities

1. Production Planning & Execution

Create daily, weekly, and monthly production plans as per outlet requirements.

Ensure timely production of cakes, breads, cookies, puffs, snacks, and other bakery items.

Maintain strict product consistency, quality, and taste profiles.

Track and ensure zero delay in dispatches to outlets.

2. Quality & Hygiene Control

Implement and monitor hygiene SOPs (FSSAI standards, cleaning checklists, equipment sanitization).

Conduct regular quality checks of raw materials, in-process products, and finished goods.

Reduce wastage, breakage, and ensure FIFO (First In First Out) system.

3. Team Management

Lead, train, and supervise bakery chefs, helpers, packers, and housekeeping staff.

Assign tasks, manage shift schedules, and ensure discipline within the team.

Identify skill gaps and provide required training or coaching.

4. Inventory & Material Management

Monitor daily consumption of raw materials and packaging.

Coordinate with procurement for timely purchase of ingredients.

Prevent stock-out situations and maintain accurate stock records.

5. Equipment & Facility Maintenance

Ensure machines (mixers, ovens, sheeters, freezers, etc.) are in proper working condition.

Coordinate with maintenance team for timely service and breakdown management.

Optimize usage of machinery to improve efficiency and reduce downtime.

6. Process Improvement & Cost Control

Standardize recipes, processes, and production systems.

Identify ways to reduce production cost without compromising quality.

Analyze wastage and implement corrective actions.

7. Reporting & Documentation

Maintain production logs, batch sheets, wastage records, and daily MIS.

Provide daily updates to management on production status, issues, and proposed solutions.

Ensure compliance with all internal SOPs.

Qualifications & Skills

37 years of experience in bakery production or central kitchen operations.

Strong knowledge of baking techniques, equipment handling, and product standardization.

Leadership ability and team management skills.

Strong planning, coordination, and problem-solving skills.

Ability to work under pressure and meet deadlines.

Basic knowledge of food safety and hygiene requirements (FSSAI).
