Job Summary:

We are seeking a skilled and experienced Tandoor Chef to join our culinary team. The ideal candidate will be an expert in traditional Indian tandoori cooking, capable of preparing authentic and flavorful dishes using a tandoor oven. The role requires attention to detail, knowledge of Indian spices and marination techniques, and the ability to work in a high-paced kitchen environment.

Key Responsibilities:

  • Prepare and cook a variety of Indian tandoori dishes including:
  • Tandoori chicken, kebabs, naan, roti, kulcha, and seafood.
  • Manage the tandoor oven with precision—controlling heat, timing, and fuel (charcoal/gas).
  • Marinate meats and vegetables with authentic Indian spices and yogurts as per recipe standards.
  • Ensure consistency in taste, texture, and presentation of all tandoori items.
  • Maintain cleanliness and hygiene in the tandoor section according to food safety standards.
  • Monitor inventory and request ingredients/supplies as needed.
  • Work closely with other chefs and kitchen staff to coordinate timely service.
  • Ensure compliance with food hygiene, health, and safety standards (HACCP).
  • Train and mentor junior kitchen staff in tandoor cooking techniques.

Requirements:

  • Minimum 3–5 years of experience in an Indian kitchen, with a focus on tandoor cooking.
  • Proven expertise in operating a tandoor oven and handling traditional Indian ingredients.
  • Strong understanding of Indian spices, marinades, and flavor profiles.
  • Ability to work under pressure and manage time efficiently.
  • Good communication and teamwork skills.
  • Physically fit and able to stand for long periods in a hot kitchen environment.
  • Flexibility to work evenings, weekends, and holidays.

Preferred Qualifications:

  • Formal culinary training or certification in Indian cuisine is a plus.
  • Experience in high-volume restaurants, hotels, or catering services.
  • Knowledge of North Indian and Mughlai cooking styles.
