Job Title: Executive Chef - Central Kitchen / Outlets

Location: Bengaluru, India

Role Overview:

The role is responsible for end-to-end kitchen operations with a strong focus on food quality, hygiene, cost control, standardization, and team management. The position ensures that all food produced meets brand standards while operating efficiently, safely, and commercially.

Key Responsibilities:

Food Quality & Production

  • Take overall responsibility for the quality, consistency, and safety of all food items produced.
  • Ensure proper preparation of mise-en-place across all kitchen stations.
  • Supervise cooking, thawing, holding, and storage temperatures for all raw and cooked food.
  • Continuously improve and refine existing Central Kitchen recipes without compromising brand standards.
  • Review outlet feedback regularly and implement corrective actions where required.

Cost Control & Wastage Management

  • Control overall food costs while maintaining defined quality and operational standards.
  • Monitor usage, consumption, spoilage, and wastage of all food items under supervision.
  • Minimise food wastage at every stage of production through process discipline and planning.
  • Work closely with Purchasing and Stores teams to optimise sourcing costs and reduce material losses.

Standardization & SOP Compliance

  • Ensure strict adherence to all brand SOPs by the kitchen team.
  • Develop and implement standard procedures for new tasks, menu changes, or operational conditions.
  • Drive kitchen efficiency through better workflows, yield control, and process improvements.

Hygiene, Safety & Maintenance

  • Maintain the highest standards of kitchen cleanliness, hygiene, and sanitation at all times.
  • Ensure compliance with food safety, hygiene, and sanitation practices across the department.
  • Oversee the use of prescribed cleaning chemicals and methods.
  • Coordinate pest control activities and ensure preventive measures are followed.
  • Coordinate with maintenance teams to ensure all kitchen equipment is functional and well maintained.

Dispatch & Coordination

  • Plan and manage timely dispatch of food from the Central Kitchen to outlets.
  • Ensure smooth coordination with service and operations teams for order fulfilment and pick-ups.

People Management

  • Hire, train, supervise, and develop the Central Kitchen brigade.
  • Maintain attendance records and basic workforce documentation.
  • Initiate performance evaluations for subordinate staff and support capability development.
  • Ensure team members comply with company policies and conduct guidelines.
  • Build a motivated, disciplined, and positive kitchen team culture.

Key Requirements:

· Over 12 years of progressive culinary experience, with at least 3–5 years in a multi-unit or corporate role.

· Prior experience in QSR, casual dining, cloud kitchens, Central kitchens preferred.

· Formal culinary qualification is desirable.

· Strong culinary fundamentals with multi-cuisine exposure.

· Proven experience in recipe standardization and scale-up.

· Commercial acumen with understanding of food cost and margins.

· Training and people development capability.

· High attention to detail and process orientation.
