Job Summary

The Commis 1 – Indian & Tandoor Chef is responsible for assisting in the preparation, cooking, and presentation of Indian and tandoor dishes while maintaining high standards of food quality, hygiene, and kitchen safety. The role requires hands-on experience in Indian gravies, tandoor operations, and basic kitchen management.

Key ResponsibilitiesFood Preparation & Cooking

  • Prepare and cook Indian and tandoor dishes as per standard recipes and portion sizes
  • Operate and manage the tandoor (roti, naan, kulcha, tikkas, kebabs, etc.)
  • Assist in mise-en-place for daily kitchen operations
  • Ensure consistency in taste, texture, and presentation

Kitchen Operations

  • Follow instructions from the Sous Chef / Head Chef
  • Maintain cleanliness of the tandoor area, workstations, and equipment
  • Ensure proper storage and labeling of food items (FIFO)
  • Assist in stock checking and reporting shortages

Hygiene & Safety

  • Maintain high standards of food hygiene as per FSSAI guidelines
  • Follow kitchen safety procedures, especially while handling tandoor and hot equipment
  • Ensure proper use of protective gear and uniforms

Team Coordination

  • Support senior chefs during service hours
  • Coordinate with kitchen stewards for smooth operations
  • Assist in training junior kitchen staff when required

Skills & Requirements

  • 1–3 years of experience as Commis 1 / Tandoor Chef in a hotel or restaurant
  • Good knowledge of Indian cuisine and tandoor cooking
  • Ability to work in a fast-paced environment
  • Basic understanding of food safety and hygiene
  • Team player with a positive attitude

Qualifications

  • Diploma / Certificate in Hotel Management or Culinary Arts (preferred)
  • Relevant kitchen experience may substitute formal education

Working Conditions

  • Long standing hours and exposure to heat (tandoor)
  • Shift-based work, including weekends and holidays

Job Types: Full-time, Permanent

Pay: ₹12,000.00 - ₹18,000.00 per month
