Job Description – Commis I (Indian & South Indian Cuisine)

Location: VITS Select, Bharuch – Gujarat

Position Overview

VITS Select Bharuch is looking for an experienced Commis I specializing in Indian & South Indian cuisines. The ideal candidate must have strong hands-on cooking skills, knowledge of regional recipes, and prior hotel kitchen experience.

Key Responsibilities

Prepare and cook dishes from Indian and South Indian sections as per standardized recipes.

Manage the assigned kitchen section independently during shifts.

Ensure food quality, consistency, and presentation standards are maintained at all times.

Assist CDP/DCDP in planning mise-en-place for daily operations.

Maintain hygiene, sanitation, and cleanliness of the kitchen area.

Ensure proper storage, labeling, and rotation of ingredients as per HACCP standards.

Coordinate with service teams for smooth order execution during peak hours.

Train Commis II/III and helper staff when required.

Follow cost control measures by reducing wastage and monitoring food portioning.

Support banquet and special menu operations as assigned.

Requirements

Experience: Minimum 2–3 years in Indian or South Indian kitchen in hotels or upscale restaurants.

Strong knowledge of regional gravies, tandoor basics, South Indian breakfast, chutneys, curries, and accompaniments.

Ability to handle independent production during busy operations.

Good communication and teamwork skills.

Should be disciplined, punctual, and able to work in shifts.
