Commis Chef Trainee – Continental (Base Kitchen)

Department:

Continental Kitchen / Base Kitchen / Production Kitchen

Reports To:

Chef de Partie / Sous Chef / Kitchen Supervisor

Job Summary:

The Commis Chef Trainee – Continental (Base Kitchen) supports the continental kitchen team in food preparation and bulk production while learning professional kitchen operations. The role focuses on assisting in mise en place, cooking, portioning, and maintaining hygiene standards in a high-volume base kitchen environment.

Key Responsibilities:Food Preparation & Production

  • Assist in preparation of continental dishes, sauces, stocks, and accompaniments.
  • Support bulk cooking operations as per standardized recipes and production schedules.
  • Perform basic cooking tasks under supervision (boiling, grilling, sautéing, blanching).
  • Assist in plating, portioning, and packing of food for dispatch or service.

Kitchen Operations

  • Follow daily production plans and instructions from senior chefs.
  • Ensure proper handling and storage of raw materials and cooked food.
  • Operate basic kitchen equipment safely under guidance.

Quality & Hygiene

  • Maintain cleanliness of workstations, utensils, and kitchen equipment.
  • Follow food safety, hygiene, and sanitation standards (HACCP).
  • Assist in temperature control, labeling, and FIFO practices.

Learning & Development

  • Learn continental cooking techniques, recipes, and kitchen SOPs.
  • Observe and follow correct cooking methods and portion control.
  • Take feedback positively and improve skills continuously.

Teamwork & Discipline

  • Work cooperatively with team members to meet production timelines.
  • Follow kitchen discipline, grooming standards, and safety procedures.
  • Support senior chefs during peak production hours.

Skills & Competencies:

  • Basic understanding of continental cuisine (preferred).
  • Willingness to learn and grow in a professional kitchen environment.
  • Ability to work in a fast-paced, high-volume base kitchen.
  • Good communication and teamwork skills.
  • Attention to hygiene and cleanliness.

Qualifications & Experience:

  • Culinary trainee / ITI / Hotel Management student or graduate (preferred).
  • 0–1 year experience (freshers welcome).
  • Exposure to continental kitchen or base kitchen operations is an advantage.

Job Type: Full-time

Pay: Up to ₹20,000.00 per month
