Job Description

Job Summary:

The Commis 1 is a senior kitchen assistant responsible for preparing and cooking food in the Chinese and Continental sections of the kitchen. Reporting to the Demi Chef de Partie (DCDP) or Chef de Partie (CDP), the Commis 1 helps ensure smooth kitchen operations by maintaining food quality, hygiene, and consistency during service.

Key Responsibilities: Chinese Cuisine Duties

  • Prepare ingredients and cook Chinese dishes such as fried rice, noodles, spring rolls, stir-fried vegetables, and basic sauces.
  • Assist in the operation of woks, steamers, deep fryers, and other Chinese kitchen equipment.
  • Follow traditional and modern Chinese recipes under the guidance of senior chefs.

Continental Cuisine Duties

  • Prepare and cook Continental items like pasta, grilled meats/vegetables, soups, salads, and appetizers.
  • Use techniques like sautéing, grilling, baking, and roasting as required.
  • Ensure proper portioning and plating based on kitchen standards.

General Duties

  • Ensure mise-en-place is ready before each shift (cutting vegetables, marinating proteins, etc.).
  • Maintain cleanliness and hygiene of workstations and utensils at all times.
  • Label, date, and store all prepared food items properly (FIFO method).
  • Assist CDP and DCDP during busy service hours.

Requirements: Education & Experience

  • Diploma or certification in Culinary Arts or Hotel Management (preferred).
  • 1–2 years of experience in a professional kitchen.
  • Prior experience in Chinese and/or Continental cuisine is essential.

Skills & Attributes

  • Good understanding of Chinese and Continental cooking techniques.
  • Ability to follow recipes and kitchen instructions accurately.
  • Strong sense of hygiene, cleanliness, and kitchen discipline.
  • Ability to multitask and work under pressure during service times.
  • Positive attitude and willingness to learn and grow in the kitchen.

Hygiene & Safety

  • Adhere strictly to food safety standards (HACCP/FSSAI).
  • Sanitize tools and work surfaces regularly.
  • Wear proper uniform and PPE during kitchen operations.

Working Conditions:

  • Rotational shifts, including weekends and holidays.
  • Long hours standing in hot kitchen environments.
  • Fast-paced and team-driven work environment.
