Job Description

Key Responsibilities

Oversee production and baking of breads, croissants, and other viennoiseries ensuring premium quality and consistency.
Maintain optimal texture, flavor, and appearance of all bakery items served.
Plan and organize daily mise en place to ensure readiness for service and timely delivery of products.
Supervise, train, guide, and support junior staff and commis in bakery operations.
Follow baking schedules to meet demand and maintain proper inventory and stock levels.
Assist the Head Baker in new recipe development, menu updates, and seasonal product innovations.
Adhere strictly to hygiene, sanitation, and food safety regulations according to company standards.
Monitor wastage and contribute to cost control with efficient use of ingredients and equipment.
Operate bakery equipment such as ovens, mixers, and proofers safely and responsibly.
Coordinate with front-of-house teams to ensure timely and fresh product availability.

Qualifications Skills

Diploma/Degree in Baking, Pastry Arts, Culinary Arts, or relevant experience.
25 years of bakery experience, preferably in artisan bread and viennoiserie production.
Strong knowledge of dough fermentation, lamination, and baking techniques.
Ability to work under pressure while maintaining high quality standards.
Excellent teamwork, time management, and leadership abilities.
Passion for baking innovation and craftsmanship.
