CDP - INDIAN

As a Chef de Partie specializing in Indian cuisine, your role will involve preparing, cooking, and presenting high-quality Indian dishes with a deep understanding of regional flavors, ingredients, and cooking techniques. You will ensure consistency, kitchen efficiency, and hygiene standards at all times. - Prepare and cook authentic Indian dishes from various regions like North Indian, South Indian, Mughlai, and Tandoor. - Maintain consistent quality and presentation of food. - Supervise and mentor commis chefs and kitchen assistants. - Uphold cleanliness and organization in the kitchen following HACCP and food safety guidelines. - Properly store and label ingredients and prepared items. - Collaborate with Sous Chef and Head Chef on menu planning and daily specials. - Control portion sizes and minimize wastage for cost efficiency. - Manage inventory and report shortages or needs. - Train junior staff on Indian cooking techniques and kitchen protocols. Your qualifications should include: - Previous experience as a CDP or similar role in Indian cuisine. - In-depth knowledge of Indian spices, ingredients, and traditional cooking methods. - Ability to independently manage a kitchen section. - Familiarity with food safety standards and kitchen hygiene practices. - Strong organizational and time-management abilities. - Comfort working in a fast-paced environment. - Excellent teamwork and communication skills. Preferred qualifications may include: - Culinary diploma or certification from a recognized institute. - 3-5 years of experience in a professional kitchen, focusing on Indian cuisine. - Previous work experience in hotels, resorts, or high-end restaurants would be advantageous.
