Job Summary:

ZOCA Café, Bhiwani is seeking an experienced Chef de Partie (CDP) to lead the Indian Curry and Tandoor section of our kitchen. The CDP will be responsible for managing the preparation and presentation of authentic vegetarian Indian curries and tandoori dishes, supervising junior kitchen staff, maintaining hygiene standards, and ensuring smooth kitchen operations.

Key Responsibilities:

  • Lead the Indian Curry and Tandoor section by managing day-to-day kitchen operations.
  • Prepare and cook a wide variety of pure vegetarian Indian curries and tandoori specialties as per recipes and quality standards.
  • Supervise, train, and mentor Commis and other junior kitchen staff in the section.
  • Ensure consistent taste, portion control, and presentation of dishes.
  • Oversee mise-en-place, inventory management, and ingredient preparation for the section.
  • Monitor and maintain kitchen hygiene, cleanliness, and safety standards in compliance with FSSAI and HACCP guidelines.
  • Collaborate with Sous Chef and other kitchen departments to ensure timely food service.
  • Control food wastage and ensure efficient use of resources.
  • Maintain equipment and tools, especially tandoor ovens and curry cooking vessels.
  • Assist in menu planning, recipe development, and introduction of new dishes in the Indian cuisine section.

Requirements:

  • Minimum 3–5 years of kitchen experience with a focus on Indian vegetarian curry and tandoor preparation.
  • Prior experience as a CDP or similar leadership role in a multi-cuisine or Indian restaurant.
  • Strong knowledge of Indian spices, cooking methods, and tandoor operations.
  • Good leadership, organizational, and communication skills.
  • Ability to work efficiently under pressure in a fast-paced kitchen environment.
  • Thorough understanding of food safety and hygiene standards (HACCP, FSSAI).
  • Team player with a positive attitude and willingness to mentor others.

Preferred Qualifications:

  • Diploma or degree in Culinary Arts / Hotel Management (preferred).
  • Experience in pure vegetarian kitchens or multi-cuisine restaurants.
  • Familiarity with inventory control and kitchen cost management.

Work Schedule:

  • Rotational shifts covering lunch and dinner services.
  • Availability on weekends, holidays, and special events.
