Job Description

Specialized in preparing traditional Indian dishes with a focus on items cooked in a tandoor (clay oven). This role requires expertise in marination, grilling, roasting, and baking techniques unique to tandoori cuisine. The chef is responsible for ensuring authentic flavors, maintaining high food quality, and managing tandoor operations safely and efficiently.

Key Responsibilities

  • Prepare and cook a variety of tandoori dishes such as naan, roti, kebabs, tikkas, tandoori chicken, seafood, and vegetables.
  • Handle all marination processes, ensuring proper seasoning and overnight preparation when needed.
  • Operate and maintain the tandoor oven, including temperature control and safety procedures.
  • Ensure consistent taste, presentation, and portion sizes for all dishes.
  • Monitor food stock levels and assist in ordering ingredients to avoid shortages.
  • Maintain cleanliness and hygiene of the kitchen area, tools, and equipment.
  • Follow food safety standards, including proper storage and handling of ingredients.
  • Work with kitchen staff to coordinate meal preparation and ensure timely service.
  • Develop new tandoori-style recipes or improve existing menu items.
  • Train junior staff on tandoori techniques and kitchen procedures.

Skills & Qualifications

  • Proven experience as a Tandoori Chef or in a similar role in an Indian kitchen.
  • Strong knowledge of Indian spices, marinades, and traditional cooking methods.
  • Ability to operate and maintain a tandoor oven safely.
  • Good understanding of food safety and hygiene practices.
  • Ability to work efficiently under pressure and in high-heat environments.
  • Strong attention to detail and commitment to food quality.
