Job Title: South Indian Cook

Department: Kitchen / Food Production
Reports To: Sous Chef / Executive Chef

Job Summary

The South Indian Cook is responsible for preparing authentic South Indian dishes with consistent taste, quality, hygiene, and portion control. The role includes daily production, mise en place, bulk cooking, and adherence to food safety and cost control standards.

Key ResponsibilitiesFood Preparation & Cooking

• Prepare South Indian dishes such as Idli, Dosa, Appam, Puttu, Sambar, Rasam, Avial, Thoran, Kootu, Erissery, Chutneys, and Curries
• Handle bulk cooking for buffet, staff meals, and banquets
• Maintain standard recipes and portion control
• Ensure food is prepared and served at correct temperature and quality

Hygiene & Food Safety

• Follow personal hygiene, grooming, and uniform standards
• Maintain cleanliness of work area, equipment, and utensils
• Follow HACCP, food safety, and sanitation SOPs
• Proper labeling and storage of raw and cooked food

Production & Cost Control

• Assist in daily production planning
• Control wastage and follow FIFO / FEFO
• Inform HOD about raw material shortages
• Support food cost control and yield management

Team & Operations

• Coordinate with commis and helpers
• Follow instructions from Sous Chef / Executive Chef
• Support new menu trials and festival menus
• Assist during peak hours and special functions

Skills & Knowledge

• Strong knowledge of traditional South Indian cuisine
• Experience in bulk cooking and buffet service
• Basic understanding of food costing and yield
• Time management and multitasking ability
• Knowledge of kitchen equipment and safety

Qualifications

• Minimum 1–3 years experience as South Indian Cook
• Hotel Management / Catering Certificate (preferred)
• Ability to work in shifts and under pressure
