South Indian Chef (CDP)

Role Overview: You will be responsible for preparing and cooking authentic South Indian dishes such as idli, dosa, vada, sambar, rasam, avial, poriyal, chutneys, biryani, curries, etc. You will supervise Commis and other junior staff in the South Indian section, ensuring consistent quality, portioning, and presentation of all dishes. Additionally, you will maintain mise-en-place, ensure timely preparation for service, and train junior chefs on South Indian culinary techniques and recipes. Key Responsibilities: - Prepare and cook authentic South Indian dishes - Supervise Commis and other junior staff in the South Indian section - Ensure consistent quality, portioning, and presentation of all dishes - Maintain mise-en-place and ensure timely preparation for service - Train and guide junior chefs on South Indian culinary techniques and recipes - Monitor stock levels of spices and ingredients; raise requisitions as required - Ensure compliance with HACCP, food safety, and hygiene standards - Control wastage and ensure cost-effective use of ingredients - Collaborate with the Sous Chef/Executive Chef in menu planning and new dish development Qualification Required: - Relevant culinary qualifications or proven experience in South Indian cuisine - Strong knowledge of South Indian culinary techniques and recipes - Ability to work efficiently in a fast-paced kitchen environment - Good communication and leadership skills to supervise junior staff effectively Please note that this is a permanent position located in Kollam, Kerala.
