Job Summary:

The Regional Bakery In-Charge will be responsible for overseeing the complete bakery operations across multiple retail outlets in Saudi Arabia and the Middle East. This role requires strong expertise in bakery production, product development, quality control, and retail operations. The position ensures operational excellence, consistent product quality, enhanced customer experience, and improved business performance for the bakery category.

Key Responsibilities:

Operational Management

• Manage and monitor daily bakery operations across all regional stores.
  
• Ensure consistent production quality, adherence to recipes, and standard operating procedures.
  
• Oversee inventory levels, production planning, and wastage control.
  
• Maintain proper equipment functionality, hygiene, and safety standards in all bakery units.
  
• Ensure compliance with food safety standards, HACCP, and local regulatory requirements.
  

Product Development & Category Management

• Develop innovative bakery products based on market trends and customer preferences.
  
• Review product assortment and optimize SKU mix to drive profitability.
  
• Coordinate with procurement teams for sourcing raw materials and vendor management.
  
• Implement effective pricing, promotions, and category plans to enhance sales performance.
  

Quality Assurance

• Conduct regular store visits and audits to ensure adherence to bakery quality and freshness standards.
  
• Standardize recipes, processes, and product presentation across all outlets.
  
• Monitor shelf-life, product rotation, and display quality.
  

Team Leadership

• Lead, guide, and support bakery production teams, chefs, and supervisors across various locations.
  
• Conduct training programs on recipe execution, food safety, production techniques, and customer service.
  
• Set performance KPIs and ensure productivity across units.
  

Customer Experience

• Enhance the bakery counters with attractive merchandising and product display standards.
  
• Address customer feedback, quality issues, and product improvement opportunities.
  
• Support store teams in delivering high-quality service and ensuring customer satisfaction.
  

Qualifications & Skills:

• Bachelors degree in Hotel Management, Bakery & Confectionery, Food Technology, or related field (preferred).
  
• 12-20 years of progressive experience in bakery operations within retail, hypermarkets, or large-scale production units.
  
• Strong knowledge of bakery production processes, ingredients, and equipment.
  
• Experience in managing multi-location operations and large bakery teams.
  
• Strong business acumen with an understanding of retail KPIs (sales, margins, wastage, shrinkage).
  
• Excellent leadership, planning, and communication skills.
  
• Ability to drive innovation and maintain consistency in product quality across regions.
  

Additional Requirements

• Willingness to travel frequently across Saudi Arabia and other Middle Eastern regions.
  
• Strong vendor management and cost control capabilities.
  
• Ability to work in a fast-paced retail environment with multi-cultural teams.
