Research Job Title:

R&D Executive Confectionery Division

Department:

Research & Development

Reports To:

Head – R&D / Managing Director

Job Summary:

As an R&D Executive in the confectionery segment, you will be responsible for the end-to-end development of new products, ensuring innovation, quality, and regulatory compliance. This includes formulation, prototyping, sensory and lab analysis, and documentation. You will also support packaging development and food safety norms.

Key Responsibilities:

Product Development:

Formulate and develop new confectionery recipes, including chocolates, jellies, etc

Modify and optimize existing formulations for cost, taste, texture, and shelf-life.

Conduct trials in pilot and production scale and lead product approvals from senior management.

Raw Material & Ingredient Knowledge:

Apply strong understanding of the physical and chemical properties of raw materials to ensure product stability and functionality.

Evaluate and approve new ingredients as per quality and regulatory standards.

Regulatory & Quality Compliance:

Ensure all product formulations and processes align with FSSAI regulations and company quality standards.

Approve packaging materials in compliance with food safety and regulatory norms.

Analytical Testing:

Conduct and interpret moisture analysis and other basic analytical parameters of finished products.

Work closely with the QA/QC team for product validation and documentation.

Documentation & Reporting:

Maintain detailed documentation of formulations, trial results, changes, and approvals.

Present samples and reports to the MD and other stakeholders for review and feedback.

Skills & Competencies:

Strong knowledge of food science, especially in confectionery ingredients and processes

Hands-on experience with lab trials, production-scale runs, and sensory evaluation

Familiarity with FSSAI guidelines and regulatory labeling norms

Good communication and documentation skills

Ability to work independently and cross-functionally with QA, procurement, and marketing teams

Educational Qualification:

B.Tech / M.Tech in Food Technology, Food Science, or relevant field & Development

Head – R&D / Managing Director
