Job Description

Company: The Sanctuary Bar & Kitchen
Location: Film Nagar, Hyderabad.Reporting to: Executive chef/ CDP

The Demi Chef de Partie (DCDP) is responsible for supporting the Chef de Partie in the preparation, production, and presentation of high-quality Japanese dishes. This role requires strong attention to detail, discipline, and knowledge of traditional and modern Japanese culinary techniques, including sushi, tempura, robatayaki, and/or kaiseki.

Key Responsibilities:

  • Assist in the preparation and execution of Japanese dishes in your assigned kitchen section (e.g., sushi, grill, tempura, simmered dishes)
  • Ensure all mise en place is completed to the highest standard before service
  • Maintain proper portion control and presentation in accordance with house standards
  • Follow hygiene, sanitation, and safety procedures in accordance with HACCP and company policies
  • Support the Chef de Partie and Sous Chef in daily kitchen operations
  • Monitor food stock and assist with inventory management and ordering
  • Train and supervise junior staff and apprentices within your section
  • Maintain cleanliness and organization of the kitchen and storage areas

Requirements:

  • Minimum 4–5 years of kitchen experience, preferably in Japanese cuisine (experience in kaiseki, sushi, or izakaya-style cooking is a plus)
  • Basic knowledge of Japanese cooking techniques, ingredients, and knife handling
  • Ability to work under pressure and follow instructions accurately
  • Team player with a positive attitude and willingness to learn
  • Understanding of food safety and hygiene regulations
  • Culinary diploma or relevant training is an advantage

Salary:

  • 25k to 27k Per month ( Based On Food Trails)
