Job Description

Job Title: Garde Manger

Department: F&B Production

Reports To: Executive Chef

The Garde Manger is responsible for the preparation and presentation of all cold kitchen items, including salads, appetizers, cold meats, cheeses, pâtés, terrines, canapés, and buffet displays. The role requires creativity, attention to detail, and adherence to hygiene and food safety standards to ensure high-quality and visually appealing dishes.

Key Responsibilities:

  • Prepare, plate, and present cold food items including salads, dressings, hors d’oeuvres, charcuterie, terrines, and cold sauces.
  • Maintain high standards of food quality, taste, and presentation at all times.
  • Design and set up attractive buffet displays, carvings, and decorative garnishes.
  • Ensure all food preparation is done according to recipes, portion control, and plating standards.
  • Monitor and maintain inventory of cold kitchen items; assist in requisitioning and stock rotation.
  • Maintain cleanliness, sanitation, and organization of the garde manger section in compliance with HACCP and food safety standards.
  • Work closely with the Executive Chef / Sous Chef to develop seasonal menus and special event offerings.
  • Supervise and train commis and helpers assigned to the cold kitchen section.
  • Control wastage and practice cost-effective production without compromising quality.
  • Assist with banquets, functions, and special culinary displays as required.

Skills & Qualifications:

  • Proven experience as Garde Manger, Cold Kitchen Chef, or similar role in a hotel/resort/restaurant.
  • Strong knowledge of cold food preparation techniques, charcuterie, and buffet presentation.
  • Creativity in food styling, carving, and garnish work.
  • Sound knowledge of food safety, hygiene, and HACCP standards.
  • Ability to work under pressure in a fast-paced environment.
  • Team player with good communication and leadership skills.
  • Culinary diploma or equivalent professional training preferred.

Physical Requirements:

  • Ability to stand for extended periods and work in cold environments.
  • Manual dexterity and ability to handle knives and kitchen equipment safely.

Job Types: Full-time, Permanent

Pay: ₹10,000.00 - ₹15,000.00 per month
