Job Position: Executive Chef-Central Kitchen

Category: Management

Reporting To Chef Partner

Job Definition :To organise, develop, operate and administer the kitchen as per standards

and recipes developed by the company.

Duties and Responsibilities:

  • - Responsible for all items produced and quality assurance
  • - Responsible for overall food cost control without affecting standards and
  • quality, which are laid out by the management
  • - Account for the usage, consumption, spoilage and control of foodstuffs
  • produced and stored under his supervision
  • - Responsible for the preparation of mise-en-place at all stations
  • - Responsible for maintaining all attendance records
  • - Keep wastage of food to a minimum at all stages of food production
  • - Ensure that employees in the department conform to the policies of the
  • company
  • - Initiate the performance evaluation of your subordinate staff
  • - Ensure that the kitchen is clean at all times
  • - Ensure that employees in the department conform to hygiene and
  • sanitation practices
  • - Personally supervise the maintenance of proper cooking, thawing and
  • storage temperatures for all raw and cooked food
  • - Facilitate the timely pick-up of food orders placed by the service staff
  • - Co-ordinate with the respective team for maintenance of all kitchen
  • equipment.
  • - Ensure that prescribed cleaning formulae are being used to maintain the
  • highest possible standards of cleaning
  • - Develop standard procedures for new tasks and changed conditions
  • - Co-ordinate pest control procedures
  • - Improving existing CK recipes
  • - Ensuring all brand SOPs are always adhered to by your subordinates
  • - Kitchen efficiency, wastage reduction, cost control
  • - Planning dispatch from the Central kitchen to outlets
  • - Working along with the purchasing and stores department to reduce
  • sourcing costs
  • - Hiring, training and monitoring of the central kitchen brigade
  • - Hygiene, cleanliness and maintenance of kitchen areas
  • - High level of attention to detail to preserve the quality of food
  • - Review outlet feedback regularly and take corrective actions if required
  • - Ensure the team is motivated and positive
  • - You will be reporting to our Chef Partner, Chef Gurudath, on all matters
  • and will have regular interactions with management as well.
