Job Description

COMMIS I – Senior Commis (Deli + Bakery Section Lead)

Leads deli prep, bakery production assistance, and service quality at a fun, fast-paced casual dining destination. Acts as section in-charge.


Deli Responsibilities

  • Lead sandwich, salad, and cold sides during service.
  • Ensure all premium ingredients (cold cuts, cheeses, condiments) are portioned and managed with minimal waste.
  • Execute sandwiches, toasties, gourmet bowls with consistent assembly as per SOPs.
  • Train Commis II & III on slicing, mise en place, and hygiene.


Baking Responsibilities

  • Oversee daily bread and dough production (focaccia, ciabatta, brioche, baguette — depending on your menu).
  • Manage dough mixing schedule, proofing cycle, fermentation checks.
  • Operate and guide others in using combi oven/deck oven.
  • Check consistency of dough (hydration, gluten development, color, texture).
  • Ensure proper cooling, slicing, and storage of breads.
  • Maintain hydration logs, starter/biga/poolish feeding schedule if used.
  • Guide Commis II on shaping techniques and baking basics.


General Responsibilities

  • Maintain labelling, FIFO, documentation for batch production.
  • Communicate stock/low items to Sous or Head Chef.
  • Ensure bakery + deli section hygiene, sanitization & equipment care.
  • Cover for Sous Chef during breaks in production/service.


COMMIS III – Junior Commis (Basic Prep + Bakery Assistance)

Entry level role assisting with basic prep tasks and foundational bakery support.


Deli Responsibilities

  • Wash and prep vegetables (lettuce, herbs, tomatoes, cucumbers).
  • Portion cheeses, label items, refill mise en place.
  • Assist in basic assembly tasks during rush hours (under supervision).


Baking Responsibilities

  • Basic dough handling:
  • Greasing trays
  • Cling-wrapping dough tubs
  • Dusting flour
  • Portioning simple dough weights
  • Assist in arranging proofing trays, lining baking sheets, buttering molds.
  • Help with cooling and storing baked products in racks.
  • Simple tasks: egg wash, sprinkling toppings, cutting butter cubes, cleaning mixing bowls.


General Responsibilities

  • Maintain hygiene: washing equipment, cleaning counters, sanitizing boards.
  • Refill supplies: butter paper, cling film, containers, sanitizers.
  • Support delivery packing, retail counter replenishing.
