Deli Responsibilities Lead sandwich, salad, and cold sides during service. Ensure all premium ingredients (cold cuts, cheeses, condiments) are portioned and managed with minimal waste. Execute sandwiches, toasties, gourmet bowls with consistent assembly as per SOPs. Train Commis II & III on slicing, mise en place, and hygiene. Baking Responsibilities Oversee daily bread and dough production (focaccia, ciabatta, brioche, baguette — depending on your menu). Manage dough mixing schedule, proofing cycle, fermentation checks.
