Job Summary:

The Commis 2 – Indian Curry & Tandoor is responsible for assisting in the preparation and basic cooking of Indian dishes, specifically in the curry and tandoor sections. This entry-level role supports senior kitchen staff with mise en place, marination, bread preparation, and maintaining cleanliness and hygiene in the kitchen. The position is ideal for someone beginning their career in Indian cuisine with a willingness to learn and grow.

Key Responsibilities:Food Preparation Support:

  • Assist in chopping, cutting, grinding, and marinating ingredients for curries and tandoori items.
  • Help prepare base gravies, spice mixes, and dough for Indian breads.
  • Maintain readiness of mis-en-place before service hours.
  • Support in baking naan, roti, and other Indian breads under guidance.

Cooking Assistance:

  • Support Commis 1 or CDP in cooking basic Indian dishes, such as dal, vegetables, and simple curries.
  • Learn the operation of tandoor ovens (clay or gas-fired) and assist in cooking items like kebabs and tikkas.
  • Monitor basic cooking processes and alert seniors of any issues.

Cleaning & Hygiene:

  • Maintain cleanliness of the curry and tandoor section, including utensils and work surfaces.
  • Follow all kitchen hygiene and food safety protocols (e.g., HACCP).
  • Ensure proper storage and labeling of ingredients (FIFO method).

Team Support:

  • Assist in setting up and breaking down workstations at the beginning and end of shifts.
  • Work as part of the kitchen team to ensure smooth operations during service.
  • Take guidance and feedback positively and show a willingness to improve skills.

Qualifications & Skills:

  • 0.5–1 year of basic kitchen experience (Indian kitchen preferred).
  • Basic understanding of Indian spices and cooking processes.
  • Physically fit and able to work in a hot kitchen environment.
  • Eagerness to learn Indian curry and tandoor techniques.
  • Team player with a positive attitude.
  • Culinary school training is a plus but not required.

  • Flexibility to work on weekends, holidays, and rotating shifts.

Career Path Opportunities:

This role can grow into Commis 1, then Demi Chef de Partie (DCDP), and eventually Chef de Partie (CDP) with experience and performance.

Pay: ₹15,000.00 - ₹17,000.00 per month
