Job Description

The shipboard Chef de Partie Sushi plays a critical role in the culinary team, specializing in the preparation and presentation of high-quality sushi and sashimi that align with commitment to excellence . This position is responsible for executing authentic sushi dishes while maintaining the highest standards of hygiene, quality , and creativity.
The Chef de Partie Sushi's primary responsibility is to prepare and serve sushi and related dishes efficiently, showcasing both traditional techniques and innovative presentations. Collaboration with the Chef de Cuisine Sushi Chef and other culinary team members is essential to enhance the overall dining experience.

Sushi Expertise:

Prepare and present a variety of sushi and sashimi, including nigiri, maki, and temaki, utilizing authentic techniques and ingredients.
  • Demonstrate proficiency in the selection and handling of seafood , rice preparation , and the use of specialized sushi tools.
  • Familiarization with omakase dining format and service .

Culinary Execution:

  • Follow established recipes and sushi standards to ensure consistency and quality in every dish served.
  • Create visually appealing presentations that reflect the artistry of sushi making. Guest Experience Focus:
  • Contribute to a dining experience that exceeds guest expectations by delivering high-quality, beautifully presented sushi.
  • Engage with guests to share knowledge about sushi, enhancing their dining experience and fostering appreciation for the cuisine.

Operational Support

:

  • Maintain cleanliness and organization in the sushi station , adhering to health and safety standards at all times.
  • Assist in the daily setup and breakdown of the sushi area , ensuring all equipment is sanitized and properly maintained.

Quality Assurance

:

  • Uphold strict standards of food safety and hygiene, conducting regular checks on ingredients and prepared dishes to ensure compliance with health regulations.
  • Monitor inventory levels of sushi ingredients and communicate needs for restocking to the Chef de Cuisine Sushi Chef.
