Job Title : chef de partie (CDP)

:

(First 8 months in Mumbai during Central Kitchen Pre-Opening)
Experience: 3 to 7 Years Working Shifts: Morning/Afternoon/Evening/Night

(9-hour shift, 6 days working, alternate weekly off)

Industry: Premium Pastry & Bakery brand in QSR Industry

Package: 5 to 7 LPA

Position Overview

Chef de Partie (CDP) Continental / Western Breakfast

Accommodation & Food in Mumbai will be fully provided by the company during the 8-month period.

Key Responsibilities :

Continental & Western Cuisine

  • Prepare, cook, and present high-quality Continental cuisine, Italian dishes, Western breakfast, grilled items, baked items, and pasta preparations.
  • Main course not Included, only western Cuisine
  • Ensure consistency in taste, portioning, and presentation as per brand standards.
  • Support pastry team where required since the brand specializes in premium pastries.

Kitchen Operations

  • Manage and oversee a specific section of the kitchen, ensuring smooth workflow and timely food dispatch.
  • Assist Sous Chef/Head Chef in menu planning, food trials, and recipe development for the Central Kitchen.

Quality & Hygiene Compliance

  • Maintain strict adherence to food safety standards (HACCP, FSSAI guidelines).
  • Ensure cleanliness, proper storage, and maintenance of kitchen equipment.
  • Monitor FIFO/FEFO, stock rotation, and minimize wastage.

Team Coordination

  • Guide and train Commis chefs to maintain production quality.
  • Coordinate with the central kitchen team for daily production plans and dispatch schedules.
  • Support pre-opening operational setup in Kolkata (Taratala) post-relocation.

Operational Support (Mumbai First 8 Months)

  • Learn & align with Mumbai CK processes, recipes, SOPs, and quality standards.
  • Contribute to production, batch cooking, and CK operations during the initial training phase.
  • Collaborate with senior chefs to understand the brands operational flow before moving to Kolkata.

Requirements

  • 37 years of experience as CDP or DCDP in

    Continental / Italian / Western Breakfast / Grill / Pasta / Baked Items

    .
  • Strong knowledge of continental culinary techniques and kitchen operations.
  • Flexibility to work in rotational shifts (9-hour shift, 6 days working, alternate off).
  • Willingness to relocate to Mumbai for 8 months (Accommodation & Meals provided).
  • Ability to work in a high-volume production environment (Central Kitchen experience preferred).
