## **Job Description – Asian Commis Chef (Commis Level)**

**Location:** Peninsula Redpine Hotel, Andheri East

**Department:** Food & Beverage – Kitchen

**Reports To:** CDP / DCDP / Sous Chef

### **Position Summary:**

The Asian Commis Chef assists in the preparation, cooking, and presentation of Asian cuisine. This role requires basic knowledge of Asian dishes, discipline in the kitchen, and the ability to support senior chefs in day-to-day operations.

### **Key Responsibilities:**

#### **1. Food Preparation & Cooking**

* Assist in preparing ingredients and mise-en-place for Asian dishes (Chinese, Thai, Pan-Asian as per menu).

* Cook under supervision, ensuring consistency in taste and presentation.

* Follow standardized recipes and portion controls.

#### **2. Operational Support**

* Support CDP/DCDP during service hours.

* Maintain cleanliness of the assigned workstation.

* Ensure all equipment is used safely and properly.

#### **3. Hygiene & Safety Compliance**

* Follow kitchen hygiene as per FSSAI and hotel standards.

* Ensure proper storage and labeling of food items (FIFO).

* Maintain sanitization of work counters, tools, and storage areas.

#### **4. Team Collaboration**

* Work closely with other commis and senior chefs.

* Assist in receiving and storing deliveries.

* Participate in training sessions and skill development activities.

### **Requirements:**

* 1–2 years of experience in Pan-Asian / Chinese / Thai kitchen (freshers with strong interest may be considered).

* Basic understanding of Asian cooking techniques—stir-fry, steaming, wok-handling, sauces.

* Ability to work in fast-paced kitchen environment.

* Strong discipline, eagerness to learn, and teamwork skills.

* Diploma or certification in Culinary Arts / Hotel Management (preferred).

* Basic Food Safety knowledge.
