Job Description

A South Indian Chef de Partie (CDP) at Hotel Aida is responsible for preparing and cooking authentic South Indian dishes to high standards, supervising junior staff, maintaining kitchen hygiene, managing inventory, and ensuring consistent quality and presentation. This role requires a deep knowledge of South Indian cuisine, culinary techniques, and the ability to work efficiently in a fast-paced environment.

Cooking and preparation

  • Prepare authentic dishes: Cook a variety of South Indian dishes like Kerala Meals, and different Kerala cuisine curries.
  • Maintain quality: Ensure all dishes are consistently cooked to the correct taste, quality, and presentation standards.
  • Station management: Oversee South Indian section in the kitchen, ensuring timely preparation of all required items for service.

Staff supervision and training

  • Supervise junior staff: Guide and supervise commis chefs and other junior kitchen staff in the South Indian section.
  • Train junior chefs: Train junior staff on South Indian culinary techniques, recipes, and presentation.

Kitchen management and operations

  • Hygiene and safety: Maintain a clean and organized station, and ensure all food safety, hygiene, and sanitation standards are followed.
  • Inventory and stock control: Monitor stock levels, place orders for ingredients, control and calculate food cost.
  • Collaboration: Work with other kitchen sections and staff to ensure smooth service and coordinate menu items.

Menu development and innovation

  • Menu planning: Assist with menu planning and contribute to the development of new dishes or specials, while staying updated on culinary trends.

Qualifications and Skills:

  • Proven experience as a South Indian cook (minimum 5 years).
  • 1 year Diploma in Hotel management or Catering technology
  • Ability to work in a fast-paced environment.
  • Strong understanding of food hygiene and safety standards.
  • Ability to calculate food costs
