Chemist Dairy & Beverage

Job Summary:

The QC Chemist will be responsible for conducting chemical, physical, and sensory analysis

of raw milk, ingredients, in-process materials, and finished products in compliance with

quality standards and regulatory requirements. The role supports consistent product

quality, hygiene monitoring, and food safety systems in the dairy and beverage processing

environment.

Key Responsibilities:

• Analyze raw milk, milk products (cream, ghee, flavored milk), and beverages for acidity,

fat, SNF, protein, phosphatase, peroxide value, and other quality parameters.

• Conduct routine and ad hoc testing for pH, Brix, titratable acidity, moisture, FFA, etc.

• Operate and maintain laboratory equipment: Gerber centrifuge, lactometer, pH meter,

BOD incubator, Kjeldahl unit, etc.

• Maintain documentation: test records, logbooks, COAs, RM/PM test reports.

• Perform environmental monitoring, water testing (TDS, hardness, chlorine residual),

and cleaning validation swabs.

• Ensure compliance with FSSAI, BIS, ISO 22000, and customer standards.

• Assist in internal audits, root cause analysis for customer complaints, and CAPA

implementation.

• Support shelf-life studies and sensory evaluation.

• Ensure good laboratory practices (GLP), calibration schedules, and reagent preparation.

Key Skills Required:

• Technical:

• Proficiency in standard dairy testing methods: Gerber test, titration, alcohol test,

COB, MBRT, resazurin test, etc.

• Good knowledge of beverage QC parameters (especially for fruit-based and

carbonated beverages if applicable).

• Understanding of pasteurization validation, phosphatase test, and storage impact on

product quality.

• Knowledge of food additives, preservatives, and ingredient functionality.

• Regulatory & Quality Systems:

• Familiarity with FSSAI, BIS, ISO 22000, HACCP, and GMP.

• Experience with traceability, batch coding verification, and raw material approval

systems.

• Software & Tools:

• Proficiency in MS Excel for report preparation.

• Knowledge of SAP (added advantage).

Educational Qualification:

B.Sc. / M.Sc. in Chemistry/ Food Technology/ Microbiology, or related fields.

Preferred Industry Background:

• Attention to detail and documentation discipline
