Job Summary:

We are looking for a highly skilled and passionate Mughlai Chef with deep expertise in preparing authentic, flavorful Biryani (Chicken, Mutton, and Veg) and a wide range of Mughlai dishes. The ideal candidate will be well-versed in traditional techniques, marination processes, spice balancing, and dum cooking methods to deliver a rich culinary experience. The chef must also be committed to maintaining hygiene, consistency, and presentation standards.

Key Responsibilities:

• Prepare and cook authentic Mughlai dishes with a strong focus on various Biryani preparations.
• Ensure consistency in taste, quality, and presentation for every order.
• Manage kitchen operations related to biryani prep – from marination to final dum.
• Supervise kitchen staff and train them where required in handling Mughlai cuisine.
• Maintain high standards of hygiene, safety, and cleanliness in the kitchen.
• Monitor inventory of spices, rice, meats, and other key biryani ingredients; ensure proper stock rotation.
• Collaborate with management to create new recipes or improve existing ones.
• Work efficiently during peak hours without compromising quality.
• Ensure timely preparation and delivery of all orders.

Requirements:

• Proven experience as a Mughlai/Biryani Chef in a reputed kitchen.
• Deep knowledge of Mughlai spices, cooking techniques, and traditional dum biryani styles.
• Ability to handle high-volume kitchen operations.
• Strong leadership and communication skills.
• Familiarity with food safety and sanitation regulations.
• Flexibility with work hours; must be available during lunch and dinner rush.
