Lead Cook

Lead Cafeteria Cook: We are looking for a Lead Cafeteria Cook for preparing Staff Meal for employees working both in corporate and in our cloud kitchens. Experience: 4-5 years of bulk production of staff meals, bulk orders.  Prior exposure to mass meal prep: 200+ meals per day is preferred. Skills & Knowledge: Menu Execution Understand portion sizes (e.g., 300 gm per person), yield, and avoid wastage.  Proper handling of lentils, legumes, root vegetables, hard vegetables, and seasonal produce.  Familiar with basic hygiene (FSSAI Level 1 or 2 preferred), sanitisation, and correct food storage temperatures.  Can manage thick and semi-thick gravies that don't split or separate over time. Leadership & Team Handling: Able to lead a team of 2–4 junior kitchen staff or helpers.  Assign and monitor tasks for cutting, pre-prep, and cleaning. Planning & Documentation: Raw material estimation for daily/weekly menus. Stock rotation (FIFO).  Maintaining cooking logs, cleaning schedules, or pre-checks  Ability to operate large bulk cookers, tilting pans, steamers, or combi ovens.  Knowledge of low-oil, healthy cooking methods for staff meal wellness programs.  Basic ability to read recipe sheets in Hindi or English.
