GENERAL MANAGER GROWTH & EXPANSION

Kakal Kai Ruchi (KKR) Group | Target: 10 100 Outlets by 2030 | 400 Cr Vision

Role Overview

General Manager (GM)

Organizational Hierarchy

Chairman & Founder (KKR Group)

Key Responsibilities

1. Strategic Expansion & Business Development

  • Lead and execute the

    Pan-India expansion plan

    targeting

    100 outlets by FY2030

    .
  • Develop the

    FOCO & FOFO franchise framework

    , investment structure, and ROI models.
  • Identify and negotiate strategic real estate and franchise partner opportunities.
  • Oversee

    Master Franchise

    setup and ensure investor compliance with brand standards.

2. Operational Excellence

  • Drive outlet-level profitability with

    12–20% EBITDA margins

    across all clusters.
  • Maintain

    food cost between 33–43%

    and

    employee cost 15–20%

    benchmarks.
  • Oversee

    supply chain optimization

    , central kitchen efficiency, and vendor performance.
  • Implement

    standardized SOPs

    , audits, and periodic quality reviews.

3. Brand & Customer Experience

  • Uphold the

    KKR brand promise

    — Authentic, Hygienic, Homely South Indian Cuisine.
  • Ensure average

    customer rating 4.4

    and audit scores

    above 80%

    across outlets.
  • Coordinate with marketing and PR teams for

    pan-India campaigns and digital branding.

4. Financial & Investor Relations

  • Collaborate with promoters to attract

    100 Cr in strategic investments

    for expansion.
  • Prepare business reports, performance dashboards, and investor updates.
  • Support valuations, feasibility studies, and funding presentations for new outlets.

5. Team Leadership & Training

  • Build, lead, and mentor a high-performance cross-functional team of 100+ staff.
  • Conduct

    training programs

    on KKR’s service ethos, product knowledge, and operations.
  • Develop performance-linked incentive plans aligned with revenue and profit goals.

Job Knowledge – Indian Cuisine Expertise

  • Deep understanding of

    Indian, Coastal, and Regional Indian cuisines

    , including product sourcing, standardization, and flavor consistency.
  • Hands-on knowledge of

    menu engineering

    ,

    portion control

    ,

    recipe costing

    , and

    production planning

    in large-scale kitchens.
  • Familiarity with

    food safety standards (FSSAI)

    , hygiene audits, and traditional cooking techniques adapted to modern kitchen operations.
  • Experience in introducing regional Indian culinary themes across multi-city operations.

Qualifications & Experience

  • Education:

  • Bachelor’s Degree in Hotel Management / Culinary Arts / Business Administration
  • MBA or PG Diploma in Hospitality / Food Business Management (preferred)
  • Experience:

  • Minimum

    10–15 years

    in F&B / QSR / Restaurant chain management
  • Proven success in scaling multi-outlet brands (national or regional level)
  • Strong background in

    South Indian cuisine operations

    preferred
  • Experience in

    franchise development, brand growth, and central kitchen operations
