About FrusomeFrusome is India’s first fruit cream brand creating real-fruit, healthy, ready-to-eat dessert cups. We are expanding rapidly across retail, carts, modern trade, and HoReCa. We need a skilled Food Technologist to build superior formulations and ensure product stability, taste, and quality. Role SummaryThe Food Technologist will be responsible for product formulation, R&D, texture improvement, stabilizers selection, scaling production, and ensuring consistency of Frusome’s fruit cream products. You will work directly with the founder to build new SKUs and perfect existing recipes. Key Responsibilities1. Product Formulation & DevelopmentDevelop and improve fruit cream formulations (mix fruit, mango, guava, strawberry, sugar-free variants). Select suitable stabilizers, gums (CMC, guar, xanthan, NDC), emulsifiers, and dairy inputs. Create prototypes, test batches, and final product formulas. 2. Texture, Taste & Stability ImprovementMaintain smoothness, mouthfeel, and consistency of cream at normal and chilled temperatures. Reduce aftertaste from stabilizers and powders. Prevent separation, syneresis, or curdling. 3. R&D for New ProductsDevelop new flavors, new categories, and long shelf-life variants. Work on low-sugar, high-protein, and non-dairy versions if required. 4. Production ScalingConvert small lab samples into large-scale production processes. Optimize mixing, heating/cooling cycles, and viscosity control. Improve batching speed and reduce wastage. 5. Quality Control & SafetyEnsure compliance with FSSAI standards. Conduct stability testing and shelf-life evaluations. Maintain hygiene SOPs and documentation. 6. Vendor & Ingredient ManagementTest and evaluate ingredients like NDC, milk powders, flavors, fruit pulps, gums. Work with suppliers like Venkatesh Naturals, Synthite, Capcol, etc. Ensure cost-effective formulation without compromising taste. 7. Reporting & DocumentationMaintain formulation sheets, batch records, test reports, and R&D logs. Present improvements and new product ideas regularly. RequirementsDegree in Food Technology, Dairy Technology, Food Science or related field. 1–5 years experience in dairy, desserts, bakery, beverages, or FMCG R&D. Knowledge of stabilizers, emulsions, gums, and dairy chemistry. Hands-on experience in formulation and lab work. Strong understanding of FSSAI regulations.
