Food Safety Manager

Work Unit: Grand Chennai by GRT Hotels

Key Responsibilities

• Implement and maintain the Food Safety Management System (FSMS) in compliance with regulatory frameworks such as Food Safety and Standards Authority of India (FSSAI), Hazard Analysis and Critical Control Points (HACCP) and ISO 22000 standards.
• Conduct regular internal food safety audits, kitchen inspections, hygiene checks and ensure corrective actions are taken.
• Train kitchen, pantry and service staff on food handling, sanitation, cross-contamination prevention, proper storage, temperature control and pest-management.
• Monitor food storage conditions, track refrigeration/temperature logs, oversee pest control measures and sanitation schedules.
• Investigate any food safety related incident, implement corrective and preventive actions, document the outcomes and follow-up to ensure closure.

Qualifications & Skills

• Bachelors or Masters degree in Food Technology, Microbiology, Hotel Management or related field.
• Minimum

  8 years

  of experience in a food safety / quality assurance role within the hospitality or food service industry, preferably in a hotel or large F&B operation.
• Strong working knowledge of FSSAI regulations, HACCP, GMP (Good Manufacturing Practices) and ISO 22000.
• Excellent leadership, communication and training abilities. Ability to lead teams, drive a culture of food safety, mentor staff and influence across departments.
• Good analytical, documentation and problem-solving skills.
