JOB DESCRIPTIONS (JD) – Bakery Head

Job Summary:

The Head Baker is responsible for overseeing all baking operations, including product planning, recipe development, production schedules, staff management, and ensuring high-quality baked goods. This role demands strong leadership, baking expertise, creativity, and a commitment to food safety and hygiene standards.

Key Responsibilities:

1. Production & Quality Management

  • Oversee daily production of baked goods including breads, pastries, cakes, cookies, and specialty items.
  • Develop, test, and standardize new recipes based on trends, customer feedback, and seasonal needs.
  • Ensure all products meet defined quality standards for taste, appearance, and freshness.
  • Monitor baking processes and ensure consistency across all batches.

2. Team Leadership

  • Manage, train, and schedule bakery staff, including bakers, assistants, and helpers.
  • Provide hands-on training in baking techniques, hygiene practices, and operational procedures.
  • Foster a culture of teamwork, accountability, and continuous improvement.

3. Inventory & Cost Control

  • Manage inventory of raw materials, ingredients, and packaging.
  • Ensure timely procurement of supplies while minimizing waste and overstock.
  • Monitor costs and implement measures to optimize productivity and profitability.

4. Hygiene & Compliance

  • Ensure compliance with local food safety and hygiene regulations.
  • Maintain a clean, safe, and organized bakery environment at all times.
  • Conduct regular checks and audits to uphold hygiene standards.

5. Customer Focus & Innovation

  • Work with management to develop new products aligned with customer preferences and market trends.
  • Take feedback from customers and incorporate improvements into products and processes.

Qualifications:

  • Minimum 10–12 years of experience in professional baking, with at least 4 years in a leadership role.
  • Strong knowledge of bread, cakes, pastries, and dough-based product techniques.
  • Experience with bakery equipment and tools (e.g., mixers, ovens, proofers).
  • Diploma or degree in Bakery, Culinary Arts, or Hotel Management preferred.
  • Food safety certification (preferred or as per local law).

Job Type: Full-time

Pay: ₹70,000.00 - ₹90,000.00 per month
