Role Overview

Assistant Production Manager

Required Competencies

• Thorough understanding of

  bakery manufacturing processes

  .
• Strong knowledge of

  process control, quality parameters, and food safety systems

  .
• Hands-on experience in

  manpower management, production planning, and shop-floor leadership

  .
• Familiarity with

  ISO, HACCP, FSSAI, AIB

  and other audit protocols.
• Ability to drive

  efficiency, minimizes downtime, and reduces wastage

  .

Key Responsibilities

Production & Efficiency

• Ensure optimal

  manpower deployment

  to achieve maximum efficiency and productivity.
• Monitor and verify standard procedures controlling

  weight, gauge, size, color, and appearance

  of products.
• Set appropriate

  process parameters

  based on product variety and ensure timely arrangement of materials and preparatory items.
• Achieve targeted output by controlling

  changeover time, manufacturing defects, and downtime

  within budgeted levels.
• Track and analyze

  raw material variances

  to ensure cost efficiency.

Quality & Compliance

• Conduct physical verification of

  CCPs

  such as sieves, metal detectors, and web systems, ensuring documentation as per

  ISO / HACCP / FCC

  requirements.
• Follow and verify recipes as per

  SOPs

  , ensuring accuracy in all preparatory inputs.
• Perform

  Root Cause Analysis (RCA)

  and implement Corrective & Preventive Actions (CAPA) for process deviations.
• Maintain high standards of

  hygiene and housekeeping

  across production areas.

Maintenance & Audits

• Work closely with engineering teams to

  reduce mechanical breakdowns

  and associated wastages.
• Participate actively in

  internal and external audits

  including AIB, ISO, Legal Metrology, FSSAI, etc.
