Job Description

The Sous Chef (Indian Cuisine) assists the Executive Chef in overseeing all Indian kitchen operations. This includes menu planning, food preparation, maintaining quality and hygiene standards, staff supervision, and ensuring consistency in authentic Indian dishes across all service periods.

Key Responsibilities:

  • Assist the Executive Chef in planning and executing Indian cuisine menus for à la carte, buffet, banquets, and special events.
  • Supervise and coordinate activities of Indian kitchen staff, ensuring timely and efficient food production.
  • Maintain the highest standards of food quality, presentation, and consistency.
  • Develop and test new Indian dishes and recipes reflecting regional diversity (North, South, Mughlai, Tandoor, etc.).
  • Ensure compliance with hygiene, sanitation, and safety regulations (HACCP standards).
  • Control food cost through effective inventory, portion control, and waste management.
  • Train, guide, and evaluate commis and cooks to maintain skill levels and motivation.
  • Monitor kitchen equipment maintenance and report any issues promptly.
  • Assist in ordering and receiving kitchen supplies and ingredients specific to Indian cuisine.
  • Maintain effective communication between kitchen and service teams for smooth operations.

Requirements:

  • Diploma or Degree in Hotel Management / Culinary Arts.
  • Minimum 4–6 years of experience in Indian kitchen operations, with at least 2 years in a supervisory role.
  • Strong knowledge of Indian spices, regional cooking techniques, and traditional recipes.
  • Excellent leadership, time management, and communication skills.
  • Ability to work under pressure and maintain quality during high-volume operations.
  • Knowledge of food safety and hygiene standards.

Preferred Skills:

  • Expertise in Tandoor, Curry, and Regional Indian dishes.
  • Creativity in menu innovation and presentation.
  • Basic computer and inventory management skills.
  • Multitasking and adaptability in a fast-paced kitchen environment.

Job Types: Full-time, Permanent

Pay: ₹45,000.00 - ₹50,000.00 per month
