Job Description

As a Food Safety and Quality Manager in the bakery and pastry production industry, your role is crucial in ensuring the highest standards of food safety, hygiene, and product quality are maintained. Your responsibilities will include: - **Food Safety System Development** - Overseeing and enhancing food safety management systems in the kitchen. - Implementing and upholding HACCP plans, managing critical control points, and making improvements as required. - Ensuring all food safety documentation and records are accurate and up-to-date. - Preparing the kitchen and team for regulatory audits such as FSSAI, FDA, ISO 22000, and BRC. - Conducting root cause analysis for any arising issues and implementing long-term solutions. - **Hygiene and Cleanliness** - Developing and maintaining cleaning schedules for kitchens, work areas, storage, and equipment. - Monitoring daily hygiene practices to ensure adherence to safe procedures. - Leading regular hygiene inspections, addressing any gaps, and providing coaching to the team. - Managing pest control as part of the overall hygiene program, including setup, monitoring, and logging of pest management actions. - **Product Quality** - Establishing standards for product taste, texture, shelf life, and appearance. - Checking product quality throughout production and post-packaging. - Collaborating with production, R&D, and warehouse teams to maintain product consistency and address any process changes. - **Training and Team Development** - Providing training to staff on food safety systems, hygiene practices, allergen control, and documentation procedures. - Cultivating a culture of accountability for food safety within the team. - Communicating updates and improvements to staff regularly and clearly. - **Customer Complaint Response** - Promptly investigating food safety or quality complaints. - Using complaint trends to enhance systems and retrain staff. **Key Indicators for Success** - Achieving 100% audit compliance for food safety and hygiene. - Zero customer complaints related to safety or hygiene issues. - Maintaining consistent product quality in terms of taste, texture, and appearance. - Keeping incidents of food safety or hygiene breakdowns to a minimum. - Timely completion of corrective and preventive actions (CAPA). **Qualification & Experience** - Graduation in Food Technology, Microbiology, Hygiene, or Science. - 4 to 6 years of experience in food QA, preferably in bakery/pastry kitchen production. - Experience in designing, maintaining, and auditing food safety systems. **Key Skills** - Ability to develop and enhance systems. - Strong leadership skills on the shop floor. - Proficient in problem-solving and analysis. - Effective training and coaching abilities. - Meticulous record-keeping and attention to detail.
