Job Summary

A Porotta Maker is responsible for preparing authentic Kerala-style porottas (layered flatbreads) consistently and efficiently in a restaurant, café, or food production setting. The role includes dough preparation, rolling and layering porottas by hand or machine, and maintaining quality, hygiene, and kitchen workflow standards.

Key Responsibilities

• Prepare dough daily by measuring and mixing ingredients (flour, water, oil, salt) to achieve the correct consistency.
• Portion, roll, stretch, fold, and cook soft, layered porottas by hand or with manual/automatic machines.
• Ensure consistency in size, texture, appearance, and taste for all porottas produced.
• Operate porotta-making equipment safely and efficiently (if available).
• Maintain cleanliness and hygiene at the workstation and comply with food safety standards.
• Manage resting and proofing times to ensure a steady supply during service hours.
• Assist with other kitchen duties such as packing, dispatch (in factory roles), or prepping accompaniments as needed.

Qualifications & Skills

• Experience: Prior experience making porottas in a restaurant, café, or food production environment is preferred.
• Skill: Strong ability to hand-roll and cook soft, flaky porottas quickly and uniformly.
• Knowledge of both traditional hand techniques and semi-automatic processes is beneficial.
• Good understanding of hygiene, kitchen safety, and food handling practices.
• Physical stamina to stand long hours and handle repetitive manual tasks.
• Teamwork and communication skills.

Working Conditions

• full-time, in-person role in kitchens, restaurants, or bakery/food production facilities.
• May include early morning starts and busy peak service periods.
• Free food and accommodation will be provided.

Job Type: Full-time

Pay: ₹15,000.00 - ₹20,000.00 per month
