Job Description

Role Overview

The Food Safety Executive will ensure compliance with food safety, hygiene, and quality standards across all Apollo Sindoori hotel units, ODC kitchens, and hospital catering operations. The role includes audits, documentation, training, and coordination with culinary teams.

Key Responsibilities1. Food Safety Compliance & Audits

  • Conduct regular food safety and hygiene audits across units (hotels, ODC, hospital catering).
  • Ensure adherence to FSSAI, HACCP principles, and internal standards.
  • Identify non-conformities and follow up on corrective actions.
  • Monitor critical control points (CCPs) and hygiene SOPs.

2. Hygiene & Sanitation Monitoring

  • Check personal hygiene compliance of food handlers.
  • Monitor cleaning and sanitation practices, pest control, dishwashing, temperature logs, and receiving checks.
  • Ensure safe storage, FIFO/FEFO, and cold chain compliance.

3. Documentation & Reporting

  • Maintain audit reports, checklists, temperature logs, calibration records, and FSSAI documentation.
  • Assist during client audits, hospital audits, and statutory audits.

4. Training & Awareness

  • Conduct training sessions for staff on food safety, hygiene practices, allergen control, and contamination prevention.
  • Provide induction training for new employees in kitchen and service departments.

5. Coordination & Support

  • Work closely with Unit Managers, Chefs, Dietitians, and QA teams.
  • Support vendor audits, menu trials, and raw material quality checks.
  • Travel to multiple units/ODC venues as required.

Qualifications & Skills

  • Bachelor’s degree in Microbiology
  • 1–2 years of experience in food safety, quality, or hygiene roles (preferably in hotels, ODC, or hospital catering).
  • Good knowledge of FSSAI, HACCP, and GMP.
  • Strong documentation, audit, and communication skills.
  • Willingness to travel within Chennai across multiple units.

Job Types: Full-time, Permanent

Pay: From ₹25,000.00 per month
