Head Chef/Manager

Job Description: Role Overview: As a Chef Bakery Operations at our company located in Sector 17, Chandigarh/ New Chandigarh, you will be responsible for leading our full-scale bakery operations. Your role will involve overseeing the production of a variety of baked goods, managing a team of 25 to 30 members, and ensuring quality control while maintaining process efficiency. Key Responsibilities: - Plan and supervise daily production of baked goods such as breads, cakes, cookies, Croissants, pastries, puffs, and desserts. - Maintain a balance between hot bakery items (bread, sour doughs, focaccia, ciabatta, buns, etc.) and cold bakery products (cakes, mousse, tarts, pastries, etc.). - Ensure adherence to recipes, portioning, and quality standards. - Innovate and update product lines based on seasonality and customer preferences. - Lead, train, and motivate a team of 25-30 staff members, including CDPs, assistants, packers, and support staff. - Ensure smooth coordination among production, packing, and dispatch teams. - Enforce strict hygiene, food safety, and quality standards. - Monitor storage, raw material rotation (FIFO), and best-before labelling. - Coordinate with purchase and stores for timely procurement of raw materials. - Maintain stock usage records and minimize wastage. - Ensure optimal use and regular maintenance of bakery equipment like ovens, chillers, mixers, etc. - Maintain production reports and yield data. - Identify areas for process improvement and cost control. Qualification Required: - Minimum 10-12 years of bakery experience, with at least 3 years in a leadership role. - Expertise in both hot and cold bakery techniques. - Strong understanding of production planning, quality control, and team handling. - Exposure to preservative-free or artisanal bakery processes is preferred. - Excellent communication and problem-solving skills.
