The ideal candidate should have deep expertise in both hot and cold bakery products, with proven experience in managing team of 25 to 30 members and daily production workflows. The role demands a combination of hands-on skills, team leadership, process efficiency, and quality control. Key ResponsibilitiesProduction & Operations · Plan and supervise daily production of baked goods including breads, cakes, cookies, Croissants, pastries, puffs and desserts. · Maintain a balance between hot bakery (bread, sour doughs, focaccia, ciabatta, buns etc.) and cold bakery (cakes, mousse, tarts, pastries etc.). · Ensure adherence to recipes, portioning, and quality standards. · Innovate and update product lines in line with seasonality and customer preferences. Team Leadership · Lead, train, and motivate a team of 25–30 staff including CDPs, assistants, packers, and support staff. · Ensure smooth coordination among production, packing, and dispatch. Hygiene & Quality Assurance · Enforce strict hygiene, food safety, and quality standards. · Monitor storage, raw material rotation (FIFO), and best-before labelling.
