You will be responsible for leading the full-scale bakery operations at our location in Sector 17, Chandigarh/ New Chandigarh. As the Chef Bakery Operations, you should have extensive knowledge in hot and cold bakery products and possess proven experience in managing a team of 25 to 30 members along with overseeing daily production workflows. The role requires a combination of hands-on skills, team leadership, process efficiency, and quality control. Your primary responsibilities will include planning and supervising the daily production of a variety of baked goods such as breads, cakes, cookies, croissants, pastries, puffs, and desserts. You will need to maintain a balance between hot bakery items like bread, sour doughs, focaccia, ciabatta, and cold bakery products including cakes, mousse, tarts, and pastries. It is essential to ensure strict adherence to recipes, portioning, and quality standards while also innovating and updating product lines based on seasonality and customer preferences. In terms of team leadership, you will be in charge of training, motivating, and leading a team of 25-30 staff members comprising CDPs, assistants, packers, and supporting staff. Effective coordination among production, packing, and dispatch units is vital for smooth operations. Maintaining high levels of hygiene, food safety, and quality standards is a key aspect of this role. You will also oversee storage, raw material rotation, best-before labelling, and ensure minimal wastage by monitoring stock usage records. Your duties will also involve coordinating with the purchase and stores departments for timely procurement of raw materials, as well as ensuring optimal usage and regular maintenance of bakery equipment such as ovens, chillers, and mixers. Additionally, you will be responsible for maintaining production reports, yield data, and identifying areas for process improvement and cost control. To qualify for this position, you should have a minimum of 10-12 years of bakery experience, including at least 3 years in a leadership role. Proficiency in both hot and cold bakery techniques, production planning, quality control, and team management is essential. Exposure to preservative-free or artisanal bakery processes would be an advantage. Strong communication and problem-solving skills are also required.
