Job Opening: DCDP – Bakery & Pastry

Location: Noida
Department: Production

Opening: One - Bakery | One - Pastry
Industry: Bakery & Pastry / Food Brand
Reporting To: Head Chef

Job Purpose

The DCDP – Bakery & Pastry will be responsible for overseeing multiple outlets within an assigned cluster, ensuring operational excellence, product quality, food safety compliance, cost control, and consistent brand standards. The role covers both Bakery and Pastry operations, with clear responsibility for each vertical.

Key Responsibilities A. Bakery Responsibilities

  • Supervise daily bakery operations across assigned outlets.
  • Ensure standard recipes for bread, buns, rolls, pav, and savory bakery items.
  • Monitor dough preparation, fermentation, proofing, and baking processes.
  • Ensure freshness standards, batch planning, and FIFO compliance.
  • Control bakery raw material usage, wastage, and inventory.
  • Train bakery teams on SOPs, hygiene, and production consistency.

B. Pastry Responsibilities

  • Oversee pastry operations including cakes, pastries, desserts, and chocolates.
  • Ensure standardized recipes, portion control, and finishing standards.
  • Monitor cream handling, chocolate work, decoration, and product presentation.
  • Maintain consistency in taste, texture, and visual appeal.
  • Control pastry food cost, premium ingredient usage, and wastage.
  • Train pastry teams on finishing techniques, hygiene, and quality standards.

C. Common Operational Responsibilities

  • Ensure strict compliance with FSSAI, food safety, and hygiene standards.
  • Conduct regular outlet audits and quality checks.
  • Drive sales growth and support product launches and promotions.
  • Monitor inventory, stock variance, and cost control across outlets.
  • Lead, coach, and evaluate Bakery & Pastry teams.
  • Handle manpower planning, performance issues, and staff discipline.
  • Prepare and submit daily/weekly MIS and operational reports.
  • Coordinate with Supply Chain, QA, HR, and Marketing teams.
  • Implement operational improvements and SOP updates from Head Office.

Eligibility Criteria

  • Diploma/Degree in Bakery & Pastry Arts / Hotel Management preferred.
  • 4-5 years of experience in Bakery & Pastry operations.
