Job Title: CDP – Continental Cuisine

Department: Kitchen / Culinary
Reporting To: Sous Chef / Head Chef

Job Summary:

The Chef de Partie (CDP) – Continental is responsible for preparing, cooking, and presenting high-quality dishes within the assigned section. The role involves maintaining consistency, taste, and presentation standards as per brand guidelines while ensuring hygiene and safety compliance in the kitchen.

Key Responsibilities:

  • Prepare and cook continental dishes (e.g., grilled meats, pasta, sauces, soups, salads, etc.) to the highest standards.
  • Ensure consistency in taste, portion, and presentation for all dishes served.
  • Support the Sous Chef/Head Chef in menu planning, new dish development, and cost control.
  • Supervise and train junior staff (Commis) in daily kitchen operations.
  • Maintain mise en place for service and ensure timely preparation during peak hours.
  • Monitor stock levels and communicate shortages or requisitions to the Chef in charge.
  • Adhere to all food safety, hygiene, and sanitation regulations as per FSSAI and company standards.
  • Maintain cleanliness of work area, utensils, and equipment at all times.
  • Control wastage and ensure optimal utilization of ingredients.
  • Follow proper storage and labeling procedures for raw and cooked products.

Requirements:

  • Education: Diploma or Degree in Hotel Management / Culinary Arts.
  • Experience: 3–5 years of experience in Continental cuisine in a reputed hotel or restaurant.
  • Skills & Competencies:
  • Strong knowledge of Continental cooking techniques and ingredients.
  • Good communication and teamwork skills.
  • Ability to work under pressure and multitask.
  • Eye for detail in presentation and plating.
  • Sound understanding of kitchen hygiene and food safety standards.
