Job Title: Sous Chef – South Indian Cuisine

Location: Mumbai

Job Summary:

We are seeking a passionate and skilled Sous Chef specializing in South Indian cuisine to join our culinary team. The ideal candidate will support the Head Chef in managing daily kitchen operations, supervising junior staff, maintaining food quality and authenticity, and ensuring consistency in traditional and modern South Indian dishes.

Key Responsibilities:

  • Assist the Head Chef in planning, preparing, and executing authentic South Indian dishes.
  • Supervise and train commis, cooks, and other kitchen staff.
  • Ensure consistency in taste, presentation, and portioning across all South Indian menu items.
  • Innovate and contribute new recipes while maintaining authenticity and regional diversity (Tamil, Kerala, Andhra, Karnataka cuisines).
  • Monitor inventory levels, maintain stock rotation, and minimize wastage.
  • Ensure adherence to hygiene, sanitation, and food safety standards (HACCP/ISO).
  • Coordinate with service staff to maintain smooth kitchen and dining operations.
  • Assist in menu planning, costing, and seasonal specials.
  • Take charge of the kitchen in the absence of the Head Chef.

Requirements:

  • Proven experience (5–8 years) in South Indian cuisine with at least 2 years in a supervisory/lead role.
  • Strong knowledge of traditional South Indian dishes including idlis, dosas, vadas, curries, sambar, rasam, biryanis, and Kerala/Tamil/Andhra specialties.
  • Ability to manage a team and work under pressure in a fast-paced environment.
  • Strong organizational and leadership skills.
  • Diploma/Degree in Culinary Arts or Hotel Management preferred.
  • Flexibility to work shifts, weekends, and holidays.
