Job Description

Role & responsibilities

Lead the R&D and formulation of cookies and biscuits, including classic, functional, clean-label, gluten-free, and premium segments.
Develop scalable and commercially viable recipes maintaining high sensory and shelf-life standards.
Evaluate raw material quality (flours, fats, sweeteners, leavening agents) and their impact on texture, spread, bite, and flavor.
Optimize baking parameters (time, temperature, humidity) and advise on best-in-class baking technologies.
Collaborate with procurement, quality, and production teams to ensure cost-effective yet premium formulations.
Conduct shelf-life studies, sensory evaluations, and product stability testing.
Stay updated with global trends in baked goods and propose innovation pipelines.
Troubleshoot manufacturing or quality issues in biscuit/cookie production lines.

Provide technical training to production and QA teams on cookie & biscuit science.

Preferred candidate profile

Bachelor's or Masters degree in Food Technology / Bakery Science from a recognized institute.

5+ years of specialized experience in the cookie/biscuit category within the food industry.
Strong technical knowledge of ingredient functionality, process engineering, and food safety standards.
Hands-on experience with industrial baking equipment (e.g., tunnel ovens, rotary molders)
Proficiency in regulatory and labeling requirements (FSSAI, Codex, etc.).
Innovative mindset with a strong understanding of consumer trends..
