R&D Manager -FMCG

To lead the research, development, and innovation of bakery products (with a focus on cakes)

by formulating new recipes, improving existing products, ensuring cost efficiency, and

supporting scale-up for commercial production while maintaining the highest quality and

food safety standards.

Key Responsibilities

1. Product Development & Innovation

o Develop new cake recipes, textures, and flavors in line with consumer trends

and business strategy.

o Innovate with new ingredients, technologies, and baking processes.

o Conduct trials to optimize formulations for quality, shelf life, and cost

efficiency.

2. Process & Scale-Up

o Translate lab-scale recipes into commercial-scale production.

o Work closely with production teams to ensure smooth plant trials and scale-

up.

o Optimize baking parameters, mixing, proofing, and packaging processes for

consistency.

3. Quality & Compliance

o Ensure all R&D activities comply with FSSAI and international food safety

standards.

o Validate sensory attributes, texture, shelf stability, and microbiological safety

of new products.

o Maintain thorough documentation of trials, formulations, and process

parameters.

4. Collaboration & Leadership

o Work with cross-functional teams (Production, QA, Marketing, Procurement,

and Sales) for successful product launches.

o Guide and mentor bakery chefs, R&D executives, and helpers under the

bakery R&D team.

o Liaise with suppliers to evaluate and approve new ingredients and

technologies.

Job Type: Full-time

Pay: ₹1,500,000.00 - ₹2,500,000.00 per year
