Job Descriptions – Italian Kitchen Team1. Demi Chef de Partie (DCDP) – Italian CuisineSummary

Responsible for supervising a section of the Italian kitchen (pasta, pizza, grill, or antipasti). Supports the CDP in daily operations, ensuring food quality, consistency, and staff training.

Key Responsibilities:

  • Manage assigned section independently during service.
  • Prepare authentic Italian dishes with consistency and creativity.
  • Assist CDP in training and guiding junior chefs (commis).
  • Control wastage, portioning, and maintain stock levels.
  • Ensure hygiene and HACCP standards are strictly followed.

Requirements:

  • 3–5 years’ experience in Italian cuisine.
  • Strong knowledge of pasta, sauces, pizzas, risottos, and Italian starters.
  • Ability to lead a section and manage commis staff.
  • Culinary diploma/certification preferred.

2. Commis I – Italian CuisineSummary

Acts as the senior commis, directly supporting the CDP/DCDP in executing dishes and running the section when required.

Key Responsibilities:

  • Prepare mise en place and cook dishes under supervision.
  • Assist in pasta, pizza, antipasti, and grill preparation.
  • Maintain food quality and presentation.
  • Train Commis II & III in basic tasks.
  • Follow hygiene and safety standards.

Requirements:

  • 2–3 years’ experience in an Italian kitchen.
  • Good understanding of Italian food basics.
  • Ability to work independently when needed.

3. Commis II – Italian CuisineSummary

Entry-mid level commis role focused on learning and supporting food preparation in Italian cuisine.

Key Responsibilities:

  • Assist with chopping, cutting, portioning, and basic cooking.
  • Support in preparing sauces, dough, pasta, and garnishes.
  • Maintain cleanliness and workstation hygiene.
  • Learn recipes and standards from senior chefs.

Requirements:

  • 1–2 years’ experience in a professional kitchen (Italian preferred).
  • Basic knowledge of Italian cooking techniques.
  • Enthusiasm to learn and grow.

4. Commis III – Italian CuisineSummary

Junior-most role in the kitchen; responsible for assisting in basic prep and maintaining cleanliness.

Key Responsibilities:

  • Assist in vegetable cutting, dough preparation, and mise en place.
  • Keep work area and equipment clean.
  • Follow instructions from Commis II, I, and senior chefs.
  • Adhere to hygiene, food safety, and sanitation standards.

Requirements:

  • 0–1 year of kitchen experience (internship/fresher accepted).
  • Passion for Italian cuisine and willingness to learn.
  • Ability to follow instructions carefully.
