Job Summary:

We are seeking an experienced and passionate Gelato Head Chef to lead and manage gelato production at our Central Kitchen. The ideal candidate will have deep knowledge of artisanal gelato-making, recipe development, scaling production for multiple outlets, and managing a small production team. This is a hands-on role requiring technical expertise, creativity, quality control, and operational efficiency.

Key Responsibilities:Production Management

  • Oversee daily production of gelato and sorbet for multiple retail outlets or clients.
  • Maintain consistency and quality across all batches, ensuring texture, flavor, and appearance meet brand standards.
  • Scale recipes for bulk production without compromising quality.

Menu & Recipe Development

  • Develop new seasonal flavors and limited-time offerings in alignment with market trends and customer feedback.
  • Innovate with ingredients, inclusions (e.g. swirls, chunks), and techniques.

Team Leadership

  • Supervise and train junior chefs or production assistants.
  • Schedule and delegate tasks to maintain production timelines and stock levels.

Quality Control & Hygiene

  • Implement strict quality control processes and hygiene standards in compliance with food safety regulations (e.g. HACCP, FSSAI).
  • Perform regular audits of processes, equipment, and cleanliness.

Inventory & Cost Control

  • Monitor usage and wastage of ingredients; suggest ways to improve yield.
  • Work with procurement to manage ingredient sourcing and maintain stock levels.
  • Ensure production is cost-efficient without compromising quality.

Equipment & Maintenance

  • Operate and maintain gelato machines, batch freezers, blast chillers, and other relevant equipment.
  • Ensure preventive maintenance schedules are followed.

Requirements:

  • Proven experience (5+ years) as a gelato chef or pastry chef with a strong focus on frozen desserts.
  • Experience in a central kitchen or high-volume production environment preferred.
  • In-depth knowledge of gelato science, ingredient functionality, and batch freezing techniques.
  • Ability to lead a team and manage production schedules.
  • Strong understanding of food safety and hygiene regulations.
  • Creativity, attention to detail, and a passion for artisan quality.

Preferred Qualifications:

  • Culinary Degree or equivalent certification in pastry/dessert making.
  • Training or certification from a gelato institute is a plus.
  • Familiarity with Italian or European dessert traditions.

Working Conditions:

  • Central kitchen / cold production environment.
  • Flexible schedule required during peak production periods.
  • Role involves manual labor and working with cold products.

Job Type: Full-time

Pay: ₹30,000.00 - ₹40,000.00 per month
