Job Summary: The Chinese Commis 1 is responsible for assisting in the preparation, cooking, and presentation of Chinese cuisine under the supervision of senior chefs. The role focuses on traditional and modern Chinese cooking techniques and maintaining hygiene and quality standards in the Chinese kitchen section. Key Responsibilities: Assist in preparing and cooking Chinese dishes including stir-fries, dim sum, noodles, rice, sauces, and soups. Support the Chef de Partie in daily operations of the Chinese kitchen section. Ensure all mise-en-place is ready before each service. Follow standardized recipes and presentation guidelines. Maintain cleanliness and hygiene in the kitchen as per HACCP and food safety standards. Properly handle Chinese cooking tools (e.g., woks, steamers, cleavers). Monitor inventory levels and notify superiors about shortages or spoilage. Assist in receiving and storing food deliveries according to FIFO method. Contribute to maintaining high food quality and consistency during service. Uphold all kitchen SOPs and assist in minimizing food waste. Requirements: 1–2 years of experience in a Chinese kitchen or Asian cuisine section. Culinary diploma/certification is preferred but not mandatory. Basic knowledge of Chinese ingredients, spices, and cooking methods. Ability to work in a fast-paced and high-pressure kitchen. Familiarity with wok handling and basic dim sum or soup preparation is a plus. Good knife skills and understanding of kitchen sanitation. Team player with a strong willingness to learn and grow. Working Conditions: Rotational shifts including weekends and public holidays. Hot and physically demanding kitchen environment. Long standing hours and handling of heavy pots or woks.
